2) "Full size" is misleading, and "taille original" is a bad translation. The option means original size unless the original is wider than the maximum the theme allows: in that case full size means downsized to that maximum.

3) The thumbnail, medium and large options are meant as three different default sizes. You set these sizes in Settings > Media. What you'd set depends on the theme you're using. For example, if the width of the main column is 500px, you'd set the width for the medium option to around 250px and the width for the large option to around 400px. If you've done that, then when you upload a 900px wide image and select the medium option, you'll insert a 250px wide version of the image. If you insert an image that's narrower than the default for one of these options, the option will be greyed out.
Your screenshot shows 900px for the medium option: this means the width for that option is (erroneously) set to 900 in Settings > Media.

"full size" text = medium dimension
"medium" text = full size dimension

These explanations would have been way better in french
but not many french engineers are available, "overseas" ;)

The only caveat in this case is that the "background-size" property is CSS3 and so it's not supported in all older browsers, like IE 8. You can see this browser background compatibility chart:

What's the screen resolution on your son's and husband's computers? Can you take a screenshot from their computer, then upload it to your Media Library?

The likely reason is due to a lower resolution setting, where the Bouquet theme maximum width is 1100 pixels.

The reason why the body isn't "cut off" is due to the theme's responsive design.

For the responsive bit, you cannot set a static width for the content area. You have to set it as a "max-width" and then it can narrow if it has to.

In

#content

change "width" to "max-width" as below.

max-width: 725px;

Any other suggestions? It seems like the only the responsive width is off. The other thing I'm having trouble with is changing the size of the headers in the side bar. I tried to change the text size in multiple places but nothing is ever changed when I preview the page.

That's part of the reason why copying and pasting the entire original stylesheet is usually a bad idea and just writing in the new pieces for what you want to change is better.
