This is theme dependent: some themes display the beginning of the text only, a few themes display titles only, many themes display full posts.
There's no setting that would allow you to change this automatically.
On 2010, you can display (almost) full posts on category pages if you copy the whole content of each post from the Text (=code) editor and paste it into the Excerpt module of the post editor, but
a) this won't include content inserted via shortcodes (for instance videos or slideshows),
b) I don't think it's worth doing this for every single post.
So you'd better switch to a different theme.

Sorry but timethief did get the question right. The striped "continue reading" button isn't the regular read-more link you insert manually, it's the special read-more link that shows up automatically when you use sticky posts and the showcase template (which you don't use). The appearance of the regular read-more link can't be changed, except if you have the Custom Design upgrade.

I currently copy and paste all of the post into the Excerpt box, and I have "Full Text" checked in the reading category rather than summary. However after each post it still says "Continue Reading", even though there is no further information to continue reading about.

Is there a way I can permanently get rid of the "continue reading" link as it just confusing for my readers?

The continue reading link appears for posts with a featured image.
You can hide it either by removing the featured image or you can hide all links like that with the following CSS:

.more-link {

I wouldn't recommend hiding all of them though—I would recommend using the first option.

2) How posts show up on category pages is determined by the underlying files of the theme - it's not a function of the Categories widget: the widget merely provides links to each category page.
