However - I've written a second post and want to do the same thing and sticky it, but even though I've checked the box that you need to in order to 'stick' it, and applied a featured image, with an excerpt and everything (exactly the same as the first time), it won't appear on the homepage.

Have tried everything to try get it to come up, including unsticking both posts and retrying, logging off and logging in, accessing the site whilst logged off, comparing the settings of both posts, and still - the only post that will stick to the homepage is the first one. Thinking it might matter if the posts were under different categories, I changed them so they were both under the same category, but again - nothing.

Had it working earlier in the day and now it's just stuck...and even though it says my second post is 'sticky' - it appears no where.

Please help!! Been spending hours on this, trying to get it all up and running.

Yes, I understand (I checked your first post before replying). My remark stands: that type of text is good for first-time visitors, useless for returning ones, so not ideal as your front. But it's up to you to decide.

Other options:
1) You can display a shortened version, maybe with a link to the complete one, at the top of your sidebar. To do that you'll need to add a Text widget.
2) A few themes have a special front page notice you can use instead of a sticky post. Would you consider switching to a different theme?
3) If you decide you want only that text on your front page, you can re-publish it as a static page and set that page as your front. See here for more:

Setting your first post as a sticky might be ok for first-time visitors but it's not at all so for returning ones. You can re-publish its content as a static page, so that one can access it via the top menu.

No.

The conventional structure of blogs is a post based structure which is displayed in reverse chronological order with the most recent post on top. An alternative structure is a book-like structure.

(2) a clear comprehension of the fact that there is only one dynamic page in a blog for posts and we cannot post to more than that one page. But we can create the appearance that we have posted to more than one page.

We organize our posts by assigning Categories to them. When we publish a post it automatically appears on the running page for posts and also on the Categories pages and Archives pages. Note: There must be one published post in each Category in order for there to be anything to display.

A custom menu allows you to display Categories with drop-downs to sub-categories in tabs along the horizontal navigation where normally only Pages tabs are displayed. If you wish you can also include Pages with drop-downs to sub-pages and custom links in your custom menu as well.

I guess in that case, I'm looking for a way to "sticky" a post so I have a "front" or "first" page, but also keep my menu on the left that I've created through the Appearance > Menus option. Which is basically a list of pages I've made. Can I do this with posts?

Posts and Pages are different. You can only make a post into a "sticky" post you can't do that with a page. Also note that there is no automatic way to convert a Page into a Post and visa versa. You have to copy and paste the text in the Page into a new Post and then delete the Page.
