I see that you added the following CSS to hide the post meta data in the Greyzed theme:

.entry-date {
	display: none;
}
small {
	display: none;
}

Note that using the "small" element as a selector could hide other things in widgets or post content if you ever used that tag. So if you want to make it specific to just the header area, you can add a class selector before it like this:

.posttitle small {
	display: none;
}

Also note that if you remove that part, it covers the ".entry-date" rule you have above so you shouldn't need that one.

Every post URL has the date embedded into it and we cannot chnage permalink structure on free hosted WordPress.com blogs.

To remove the date and tags you have to purchase an annually renewable custom design upgrade and do the required CSS editing. Please read: http://en.support.wordpress.com/custom-design/
http://en.support.wordpress.com/custom-design/editing-css

Important note: CSS editing is theme dependent. In some authors, themes, categories and/or tags etc. cannot be hidden independently, as they are in the same selector as the other meta data elements such as date, and perhaps even the “leave a comment” link, which means if you hide one, then you hide them all.

On being sure things are fully possible, there is a preview mode on the css editor that can be used to view your changes even if you don't have the css upgrade.
