How did I do that?

You went to Pages > Add New instead of Posts > Add New - there's no other way.

To fix do I simply re-publish, or do I have to do an edit then re-publish - or what?

You go to Pages > All Pages, click the page title to edit the page, switch the editor to Text (=code), select all the content, copy, click Move to Trash; then you go to Posts > Add New, type the title, make sure the editor is switched to Text, paste the content, publish.

That is why this is happening.

There is a known bug that has something to do with autosave (it does not work with Quick Post) and something to do with your RSS feed (the posts go out on the feed, even if they vanish from the site). Until it's resolved, create all your posts from the dashboard New Posts page OR use an offline blog editor.
