I'd like to see the titles and then, when someone clicks on one of them, the text opens up.

You can insert "the more tag" into your posts on the first line of the body to achieve this.

As it works now, if I have three posts each five pages long, a reader must scroll thru ten pages to get to the beginning of the third post.

What I posted above does answer your question but in the case of lengthy posts you may wish to use "next page (pagination)" to split content within the posts into pages.

Pages always display on their own page. On its own page, a post split with the More tag appears without it. The More tag only affects the post's appearance on the main Blog.

Perhaps what you want is pagination instead.
