However, all blogs use the same photo uploader and allow categories, so there aren't restrictions in that sense. It's just that these themes are made to focus on images, which seems like a good choice for your purposes.

Really I bought an upgrade because I wanted the domain name, to have multiple navigation menus and to control my ad space. I did not realise there would be a such a significant different between wordpress and blogspot in terms of control!

they sell it with the genesis framework (no idea what that is and if I need it). I would not mind to pay for it if I can then install it on my site account I have here. the question I have is wil lI be able to install that template on here I have the WP.com free account not the .org.
Also, if I decide to go with the wp .org can I download it on my Mac or do I need a special platform?

You can create a page based website structure though very easily, provided you comprehend the differences between posts and pages. Pages are static and sit outside of the blog structure and you cannot put posts on "pages." All posts will show on the main blog page. There is no way to exclude posts from the main posts (blog) page. See this support document on the differences between pages and posts.

At wordpress.com, you organize posts by categorizing them and then you can create a custom menu and put the categories into the custom menu.

If you do not want all the posts to show on the main page, then you can create a static front page for your site. If you wish, you can also create a "blog" page, but you do not have to if you do not want to.
