@TT has a very high traffic site and does solid SEO & other things to make traffic for the whole site go up and I don't think she worries much about an individual Post -

I think you will need to go to a third party stats provider but no idea which one would work for you

If you use Duotone or Monotone themes right click is disabled. It's not available on any other themes and will not become available as it creates a false sense of security. Anyone can find instructions on the internet and get around it in less than 20 seconds flat. What's best is watermarking your images or not placing any images you don't want stolen on the interment at all. Do be aware the likes and shares are not pages view stats. Likes and shares are misleading when you are talking about page view stats. Your followers and anyone with a WordPress.com blog who is logged into WordPress.com can "like" and "share" your posts in several locations such as in email and the Reader without ever clicking into your blog and creating a page view stat.

You can control the length of the entry sent out on your RSS feed here > Settings > Reading
and choose the "summary" setting for your RSS feed or the "full text".

That does not affect the length of the post displayed on the front page or main page for posts on the blog. To create excerpts there we can split content by inserting "the more tag" http://en.support.wordpress.com/splitting-content/more-tag/

I also tried using google analytics unsuccessful and subsequently read that plugins are not possible on workpress.com.

The averages are just that, averages. Many people can view one thing and one person can hang around and look at lots of things, unless you know exactly who is doing what those stats are just an entertainment.

Subscribers get counted just the same as everyone else, just because they subscribe doesn't mean they have looked on any given day so the views are just the people who have looked at your blog regardless of where they came from.

I'm just coming up on 250k views and want to understand somethings I haven't previously bothered with.

Regarding the stats page:

1: Can anyone explain the difference between Page Views & Visitors? Each visitor looks at one+ page (The views per visitor stat seems to be between 1.25 & 1.9. Is this average, good or bad?)

2: Where do my email subscribers get counted? If they were the difference between views & visitors I'd expect that number to equal my email subscribers.
