I see how that works now. A little further question: When a wordpress user signs up using the Follow my Blog widget, I see their name and email from the my stats page. When a non-wordpress user signs up, do I still get their name, as well as the email?

Yes, there's a link to the full list near the bottom-left of http://wordpress.com/my-stats/

Alternatively, is there a way for me to directly enter the emails of those who want to follow my posts.

You can enter their email address into the widget, but they will still receive (and need to confirm) an activation email before they start receiving your emailed posts.
