Also the domain registry (europeregistry.com) requires me to specify the IP addresses of the name servers that I wish to map to.

Unfortunately we can't provide IP addresses as they change from time-to-time and your mapping would stop working. Most registries accept nameservers without an IP address - perhaps you could ask the registry if there's a way to get that working?
