I want to the post titles to be black, but keep the site title as is (dark cyan.) How can I do this?

To change page titles to black in the Elemin theme, add this to your Appearance → Custom Design → CSS editor:

.page-title {
	color: #000;
}

For posts, this example will change the post titles to black everywhere but still make them dark cyan on hover if the titles are links (i.e. on the home page or archives pages).

.entry-title,
.entry-title a {
	color: #000000;
}
.entry-title a:hover {
	color: #007B7F;
}

If using css, try using entry-title.

.entry-title {color: #00ff00;}

Changing the color code to suit your site.

I haven't looked into the types of choices available without the CSS coding.
