Once you add all your Categories to the menu you just drag them around. If you want one to be a child you place it under the desired parent and drag an snap it to the right underneath it.
This by the way also allows non-alphabetic order. That's great!!

In the oxygen demo the black menu on the left sidebar shows the categories. The BOOK category has a child category, ARTWORK
http://oxygendemo.wordpress.com/category/artwork/
which can be navigated to as an horizontal sliding drawer from BOOK.
I have been unable to get this effect by adding the categories using the Menus (even though my categories are already organized with parent/children structure).
How do I get this effect?
