I think I actually figured it out. What I'm looking for is a magazine or newspaper style theme. Something like that will allow me to display thumbnails and content from each of my categories directly on my homepage.

I would like my blog's homepage to display the latest post from each category on my blog, and not the whole blogroll. The two categories are "Quill" and "Curio." I haven't been able to find a straightforward answer or instructions on how to do this so I'm hoping someone will be able to point me in the right direction.
