It seems that the OP wants to have a gallery like the one that appears on a blog linked to from the Forever Theme Showcase page, not make one like the theme showcase page. :)

@ccmckenzie-the site you linked to has created a Gallery using a Page as an Index and then displayed the Galleries on subpages. On the Index page they used a thumbnail image and linked it to the subpage with the full Gallery. Here's info on using Pages and sub-Pages (Child Pages). http://en.support.wordpress.com/pages/

Can anyone tell me how I can replicate their photo gallery page?

You can create such a display in a text widget manually but where would you get the data from? The pages are constantly updated by Staff and we don't have access to that data. Do your intend to just copy and paste the sites they choose to feature on the Themes Showcase page? http://theme.wordpress.com/themes/forever/

We can create gallery on any post or page and this is also an excellent resource on galleries.
