The default is back to the old style now, and you can control the overall display of your galleries via Settings -> Media in your blog's Dashboard. Look for the "Tiled Galleries" setting.

Apparently the setting that caused the mosaic to appear has been deactivated globally but you should be able to activate it again in your Media settings.

Previously, my gallery was a bunch of thumbnails, all essentially the same size. I just looked at that page again and the gallery now is a gorgeous arrangement of different-sized photos arranged in a handsome grid pattern. Whatever happened, this new form is far superior. If it was a recent change by the developers, thanks!! It's beautiful.
