There are two ways:

1) create a static welcome page and then under Dashboard->Settings->Reading, set that as the blog start page. That will mean your blog posts come up on a separate place, and if you have a tabbed header you will see another tab for the blog.

2) Use a Custom Menu and then you can put a tab for the landing static page and tabs for each category page you want to show, and you don't have to provide a link to the actual blog itself at all.

Something that I can reccomend, however, is that you password-lock your posts until you want them to be publicly viewed. (Just make sure you remember the password, and unlock it when you are ready for you to view it.)
