You could create an account named something like "Guest Author" and assign that as being the author.

There is an Author box which can appear on the edit page (use the options tab which is in the upper right corner), or on the Dashboard > Posts > All Posts list there are Quick Edit and batch edit tools for changing the author of existing posts.
