Must I have a post in said category for the category to appear in the widget?

Yes. Widgets cannot display data that does not yet exist. There must be one published post in any Category for that category to display.

I just started a new blog. I decided on Origin because I like the simplicity of it for a travel writing blog. However - is it possible to only list 2 categories? I have made three categories but only two are showing up. Must I have a post in said category for the category to appear in the widget? This is the blog I am having problems with http://thewritetravelblog.wordpress.com/ The blog is set to private as I haven't finished with it.
