PDFs cannot be included in galleries. If you want to actually embed the PDF, you'll need to use a service like Scribd or Google Docs.

The images I have are all PDFs and are saved as one document. Every time I tried to add the PDF image to a post it makes it into a hyperlink (and one that I couldn't even open).

I also tried the advice on http://en.support.wordpress.com/images/gallery/, but I never seemed to be shown the 'gallery' options or anything from there. Instead I was offered to insert it into the post, whereby it show as a hyperlink.
