Just hit the More button or use ALT+T to insert a break in your post.

To turn that off, go to Dashboard>>>Users and scroll down to the bottom of the page. Uncheck that box.

When you are composing a post, click the "More" box to insert the Read More link. You can summarize before the More link and post after it. That should put summaries on the front page and full posts after the link.
