1) Buying the upgrade would allow you to change the pre style once for all. Without the upgrade you can only do it on a post-by-post basis.

2) Yes, the default font family for regular text in 2011 is Helvetica Neue.

3) The code you pasted above does change the pre font to Helvetica Neue. But it's not enough to make the result identical to regular text, because there are other differences as well (most notably the font weight). You need all this:

<pre style="font-family:'Helvetica Neue';font-size:100%;font-weight:300;background:none;padding:0;">

To clarify, it is my understanding that Helvetica Neue is already the default font(family) for the Twenty Eleven Theme.

I have to purchase an upgrade in order to keep the default font because I'm using the pre-formatting option in the text-editor?

No, I do not have the custom design upgrade.
I simply wish to use the pre-formatting option (since I write poetry mostly) but would like to maintain the font that the rest of my blog is already in. By using the text editor I have been able to use the pre-formatting option and change the font....just not to Helvetica Neue. Other fonts work (like Arial, New Times Roman). I can't see why I should have to purchase a custom upgrade just to maintain the same font across my whole blog just because I'm pre-formatting some of my posts.

Have you purchased a custom design upgrade? http://en.support.wordpress.com/custom-design/
http://en.support.wordpress.com/custom-design/editing-css/

These are 3 ways to change fonts on wordpress.com blogs.
(1) Changing font families, colors and size in text in posts or pages either post by post or page by page by coding into the HTML editor. http://en.support.wordpress.com/editors/font-size-color/

(2) Changing font colors in text in posts or pages either post by post or page by page using the #4 icon (Select text color – change the text color) in Row 2 the Visual editor. http://en.support.wordpress.com/visual-editor/#row-2

(3) Changing all font families, colors and sizes throughout the whole blog by purchasing an annually renewable Custom Design upgrade and using Typekit Fonts with Staff support.

Note: A few themes do provide for changing font color in the Blog Title and/or optional Tagline and/or links. In the majority of themes font changes to font families, colors and size in the blog title, tagline, menu, post titles, page titles, categories and tags, widget headings, comments and links cannot be done without purchasing an annually renewable custom design upgrade and doing the required CSS editing. http://wpbtips.wordpress.com/2009/03/24/color-customisable-themes/

I am having trouble with maintaining the font in any of my posts that I pre-format in the text editor. I've tried any number of ways of writing the css to no avail--always comes out just Helvetica (I think...). I would like the font to match across all posts.
I've tried it like this:
<pre style="font-family:'Helvetica Neue';font-size:15px;">preformat this

You can see the result here:
http://aprayerlikegravity.wordpress.com/2012/11/09/hidden-enough-water-phase/

I know very little about css etc. so...Am I missing something?

It is a poetry blog so I would really like to be able to pre-format AND maintain the font.
Thank you--
