Nothing input will save correctly and when I hit "update" nothing changes. I don't understand at all how to edit the theme I choose with custom photos etc. Sorry it just seems confusing to me.

If you are using a theme that does not have this "author profile" feature then you can create a draft post and place the data in it and copy and paste it on the bottom of each post before publication.
