If you are currently using Tarski, then it will not appear in the array of available themes: you will see only themes that are available to you. If you are already using it, then you don't need to choose it again.

If you use a different theme, Tarski is still there! Did you use the A-Z listing?
Random or popular listings make it difficult to find a specific theme.
