My 'blog' looks as I would like it to look, and I'm very pleased with the result.
I have to say I tried examining the "instruction manual" but to an uninitiated technical fudgewit such as I, some of the instructions are unintelligible.

so even looking at a sub-heading such as "select which menu you would like to use" means very little if you don't understand or appreciate the difference.... I know I sound like a tech-idiot, but there's a good reason for that.
It's because I am.

I wish it wasn't so, but I guess my brain isn't always wired in the way I'd ideally like.
so, I'm slow.
so it takes me a while to absorb stuff...

But I followed your instructions and I finally got there.

I am extremely inefficient when it comes to technical jargon. It may be my age, it may simply be that my brain isn't wired that way and can't "compute" (!) things of this nature very successfully or efficiently.
I find myself constantly astonished at what I do know - and didn't know I knew!
I shall try to process matters as you have described.
But this may take me several attempts to accomplish!!

You need to go to Appearance > Menus and add the missing pages manually.
