I am assuming that the email uses RSS because the delivery is so quick.

If there's no image or text, then what the RSS feed sees is basically an embed, and that can't be read, it's a blank to RSS. If you want it in the post, copy it as a Jpg and upload it to the post so something shows.

This cover image is something WordPress email sends out when the post is emailed to the subscribers. At present, the gravatar image shows up on youtube embedded posts.
