I have some pages that I modify quite a bit (at least once a week). When I modify a page content, is there any way for me to schedule the update to publish at a later time?

Yes we can schedule posts.
Just in case you meant "page" and not post, then the answer is no we cannot schedule publication of pages. Pages are meant to be used for static content that rarely changes and they sit outside the blog structure > posts vs pages
Well I'm asking if I have a page with say a list. Once a week I add a new item to that list. I want to schedule the announcement post along with an update to that page.
For example:
Current page content:
* item one
* item two
I want to schedule an update to that page that changes the content to:
* item one
* item two
* item three
You know how you update a post or a page? I was wondering can I add text to a post or page but not update immediately? I would rather set that updated text to show up at a certain time, not instantly.

We can only schedule Posts. We cannot schedule Pages. The updating function you request for Posts and Pages does not exist here at WordPress.com. So the answer to your question is "no".
