Why does my poetry get turned into a paragraph layout when it's in the archive or calendar? Is there anything I can do?

Your poems must look like 'poems' in your posts only. Anywhere else, they may look like anything.
That's because in the theme you're using (assuming you're talking about the blog linked to your username) archive and other index pages display beginnings only. When beginnings are displayed, all html tags are stripped out, which means no formatting, no links, no images, etc.
To change this, you can copy the content of the post from the html editor and paste it into the Excerpt box.
