I was simply wondering if there was any way to *choose* the blogs you want to display?
At the moment it just displays the last 20 blogs I followed, but I'd like to custom that and choose a specific group....

You can create a blogroll http://en.support.wordpress.com/blogroll/add-a-blogroll-link/
And display it in a Links widget http://en.support.wordpress.com/widgets/links-widget/
The RSS Widget displays posts from any RSS feed. You might find this handy if you want to show off one of your other blogs, or one of your favorite blogs, in your sidebar. http://en.support.wordpress.com/widgets/rss-widget/
