pardyjI kind of wanted to make subpages, pages that I could link to from another page on my WordPress blog but ones that DO NOT appear on the navigation bar. Is this possible?

Yeah. Subpages. When you create a page, that a look along the right hand side for Page Parent.
They shouldn't be showing up in any of the nav bars. I know Freshy doesn't do them.
They'll probably show up in the sidebar though just for reference.
