Is there some way I can view the complete posts instead?

If you mean including the videos, no. You can make complete posts show up if you switch the editor to HTML, copy the whole content and paste it into the Excerpt box of the editor, provided they don't include objects inserted via shortcodes: those cannot show up.
I you would consider switching to a different theme, here's a list of which themes you should avoid:
