When I buy a domain, xyz.com, is it possible to change it afterwards, if I'm not certain about the name yet? Or is the total wordpress-blog deleted then when I want to have a new name?

If you mean the name before wordpress.com (such as 'steinicketraining' in your case), it's always possible to rename that, at any time:
http://en.support.wordpress.com/changing-blog-address/
Should you have registered a custom domain name and mapped it to your blog, the procedure is a little different, in that you'd have to cancel the first domain name a register/map a second one.
In both cases there are no changes to your blog self, all content stays.
