How do I change Enterprise Theme home page from being an "uncategorized" blog category to a parent child home page referencing my other pages? If it can't be changed, can it be deleted?

You can create a suitable intro page and set it as your front as explained here:
http://en.support.wordpress.com/pages/front-page/
Since you're categorizing your posts, you can delete the "Uncategorized" category.
Note that categories and tags are exactly the same thing: don't use the same word or phrase as both a tag and a category.
