Hello,
I want to know if there is some way to make the posts views counter of wordpress 2.0 to increment only one time for visitor (not for access) and don't count my pre-visualizations during the text edition. Or at least simply reset the counter when I publish the post. It's possible?

The counter in use here at wp.com counts page views and does not count your own views if you're logged in. There's no way to change that since we're on a shared environment.
But, if you're hosted elsewhere (since you're talking about wordpress 2.0, I'm getting that feeling that you might be) you're at the wrong site. If so, you need to be over at http://wordpress.org
