Creating multiple category dropdowns

    Ok. I have a template which creates a top horizontal menu with pages such as "About", a "Home", and one for blog categories. The blog categories one is a drop-down menu, and it displays every category present on the blog. I would like, however to separate the categories out into multiple dropdowns. So one header might say "beer" and the categories within would be "Bud", "Red Hook", and "Heineken" and another header would say "liquor" and the categories would be "Vodka", "Rum", and "Whiskey". The current way it's laid out, it has the code: wp_list_categories. This means that there would be one single dropdown that has Bud, Redhook, Heineken, Vodka, Rum, and Whiskey all in it.

    I also want to be able to make one of those headers able to call up a specific category rather than go to the top or go to a page.

    How do I do this?
