Hi, I have done a ton of research to no avail and was hoping for more ideas. Is there a way to display posts from one specific category in the sidebar? I would like to make a category for short posts and have them display on the sidebar (I understand they would display in the main pane as well upon publication). Is there a widget or bit of code that would make this possible? Thanks!

Yes. As all WordPress blogs have built in feeds you can do this very easily using the RSS widget. For instructions see here > WordPress: Subscribe to a RSS Category Feed
This is the format for a category feed on WordPress.com blogs:

No, not in the widget.
I also looked into "Gallery Posts." If a short gallery post included a picture, is there a way to add this to the sidebar, achieving the same effect?
You cannot add thumbnails to the RSS widget. Thumbnail images can be displayed in image widgets or in text widgets in your sidebar. However, you cannot achieve the same effect because they are not RSS widgets.
