Sorry if this is a dumb question but I'm still trying to figure things out. When adding a tag to my post do apostrophes matter? For example should I add "Grauman's Chinese Theatre" and "Graumans Chinese Theatre"?
What about the letter s? Do I need to add movie and movies?

Yes, the apostrophe and the s matter.
Don't do both, eg "Grauman's Chinese Theatre" and "Graumans Chinese Theatre". That would be borderline spammy. Pick one or the other and be consistent with it. If you want to know what's most popular, go to the global tag page for that tag and see how often each is updated. The busier page is the more popular tag.

I agree with raincoaster and choose the version without the punctuation in all cases.
