I'm using the Vigilante theme. The categories are in list form and the posts are also in list form. I would like to include an excerpt for each post, rather than just a list. However, I checked excerpt in the screen options and the excerpt still does not show up.
Any help would be appreciated. My site is sisterhoodagenda.wordpress.com.

I am having the opposite problem.
I want my blog page to only show summaries of my posts but all the posts are showing up in full. Even when I click on summary instead of full post.

Checking something in Screen Options means that this something will show up on that particular dashboard screen, not on your actual blog.
To display excerpts instead of titles you'd have to add your own text in the Excerpt box that now shows up on your post editor screen. Unfortunately that doesn't work in Vigilance. You'll have to live with titles only, or switch to a theme that displays excerpts by default - see here:
