I've contacted support, but in the meantime...
The documentation here: http://en.support.wordpress.com/domain-mapping/google-apps-email/ is out of date... and I can't get it work with the changes over at Google Apps... anyone had success lately?

I've got it... !
Choose other (during the Google Apps verification process), than manually add a second TXT entry to your dns records on wordpress.com with the contents google apps documentation supplies under the "other" dns service provider selection.
