   How do have the people commenting on my site leave their email address so I can reply back to them?

   You can set up your comments for moderation here -> Options -> Discussion
   Complete the appropriate fields and particularly take note of
   Before a comment appears:
   * An administrator must always approve the comment
   * Comment author must fill out name and e-mail
   Click "Update Options" when you are done to save.
