But the system will not allow me to do this because of the hyphen how do I get a round this?

If the system doesn't allow it there is no way around it.

WordPress.COM does not allow hyphens in the blog URL's.

Our e-commerce site has a hyphen in it. Do you have any suggestions as to how I can work around this?

Regular domain names (registered elsewhere, not here), can be domain mapped to blogs here, but domain names here cannot have hyphens.
Your ecommerce site is most likely not hosted here, but on a third-party hosting site and there are a lot of things that can be done when self-hosting that cannot be done here.
