You can edit the post and change that.
Dashboard > Posts > All Posts
hover over the title of the post and click the edit link

When I edited a post - to correct a spelling - the post was re-issued! Is there any way to edit/correct old posts without re-distributing them?

Hmmm, it shouldn't do that unless you change the date.
So, I publish a post, then realise it has the wrong category. I edit the post, change the category and then click "update"? And it will not re-post?
No, it shouldn't.
It seems to have worked. I have no idea what happened last time, but I seem to have got it right now.
