Under my wordpress site name, the caption reads something fruity like the cats out of his pajamas. How can I change this, because it's driving me crazy!

That's a Tagline. See here > Settings > General and note you can change the Blog Title and/or optional Tagline at any time on that page.
This will help you create an effective tagline that will be displayed by search engines like Google. -
