At the bottom of my latest post, the Twitter share button has a "1" and the facebook button has a "6." Is this how many shares have happened on Twitter/facebook? If so, is there any way to see who exactly shared the links?

Yes, that is how many shares.
No, it is not possible to see who shared it. Even if that were possible, you'd only be able to see people who had their privacy protections completely disabled.
