I am having trouble working out how to embed a Docstoc.com document – they provide a normal 'embed' code, plus a WordPress shortcode, but neither seems to work.
The blog I need help with is gabrielquotes.wordpress.com.

What is the wordpress shortcode they gave you? Post it here and enclose it in the code tags.
Do they say the shortcode is for wordpress.COM sites? I know at one time they were talking about making code to use here, but I don't know if they actually did or not.
What does the shortcode look like? Could you paste it here between code tags so that we could take a look?

Do they say that shortcode works at wordpress.COM?
That is forum code. It isn't WordPress.com shortcode.
Well it's clearly labelled on the site as, "Embed on WordPress" (not necessarily WordPress.com admittedly) so I think it's quite unlikely to be forum-code.
It wouldn't work in any of my blogs, WP.com or WP.org. The square brackets with closing square brackets is forum code.
The WP radio button says "download plugin", so it's for self-hosted blogs, not wp.com blogs. You need to select the standard embed format and convert the code into a gigya shortcode. Paste the code here between backticks and we'll show you (see below reply field if you're not sure what backticks are).
