How can I insert my logo into the upper banner so that it appears on every page? Also, how can I make every page that follows maintain simply my logo and the nav bar and NOT repeat the larger photo image that sits on the Home Page?

You will need to purchase an annually renewable Custom Design upgrade and do the required CSS editing.

Looks like your theme supports both a custom Header and a Featured Image Header. Have you tried uploading a Header image and disabling the Featured Image Header? From the Dashboard, check in the Appearance menu for Header and possibly Theme Options. If you want to do any customization of the CSS you would need to upgrade or self host as the other person described.
