I was wondering if it were possible in any way to add a field to the custom form that allowed visitors to the blog to upload images from their own machine to the Feedback area? Our blog is looking to encourage viewer submissions and would be highly appreciative to know if this were at all possible?

No there is not as specific filed for what you want. You can have your readers submit image URLs in comments on your posts/pages. Then you can choose to approve and post them. You, as the admin of your blog, can also insert images into comments, so let your readers post links to their pictures wherever they are hosted online, then you could edit their comments to insert the image/images yourself.
