After reading all support I could fine, I am still unable to make any other option than 'full width' appear in the Page attributes templates window. Any suggestions? Thanks.

Pages aren't posts. Pages can't have post formats. Post formats are only for posts.
There's no "Gallery template". There's the gallery feature and the gallery post format. The two are independent.
The gallery feature allows you to upload several images at once and automatically display them in rows and columns; works in posts as well as static pages.
Selecting the gallery post format means that the front page will display one image only, with a link to the single complete post; available for posts only.
Thanks. I'll go back over the 'terms,' features, formats and display options available under both page and post until it becomes clearer.
