if I stop following someone (un-follow) do they get a notification?
same thing if one of my followers stops following my blog, do I get a notification?
I mean a notification similar to the one when I have a new follower?

No. If you stop following a blog there are no notifications sent out, you just notice you have one less follower. But, if someone keeps track of their followers, then they will know which one unfollowed them.
