I know the title sounds a little odd, but I was wondering if there was a way to limit how much text a user saw from a blog post, before they actually had to click on that blog post to get the full story. On my blog, we're posting things that are paragraphs and paragraphs long, and it can be a hassle to scroll to the next blog post. Anyone got any ideas?

Yes there are ways of splitting content in posts and pages. The most common is to use "the more tag" which displays an extract from a post as a teaser followed by a link to read the whole article on it's own page. http://en.support.wordpress.com/splitting-content/more-tag/
