Due to the nature of my blog, sometimes I want to add a big update to my posts. Naturally, I don't want to lose everything if my computer crashes, or if I accidentally refresh, so I need to be able to save my post. The problem is, this affects the post on my website immediately, so for a while you have a half-finished post available for viewing. If I unpublish the post in the meantime, the post is gone for a while. Is there a way I can save drafts of my updates without affecting the post readers will see?

Nope. My suggestion is to copy and paste the old post into a new to be updated post. Save as draft and make the necessary changes. When done, unpublish the old post and publish the updated post. Make sure the time stanp is the same.
